My Favorite Recipes

Oatmeal Pancake

1 packet of Organic Maple Brown Sugar Oatmeal

1 Free Range, Organic Egg (or Egg Substitute)

Optional Toppings:

Organic Maple syrup (Grade A)

Sprinkle of Cinnamon

½ cup of your favorite berries or banana

1 TBS of Almond or Peanut Butter

Mix the oatmeal packet and egg in a bowl and pour into a frying pan at medium heat.

Flip when cooked on one side, and then cook the other side thoroughly.

Add Toppings and ENJOY!


Everything Salad

Spring mix and/ or spinach


Green Onion

Red, yellow and orange bell peppers



Broccoli slaw



Any other fruit or vegetable you love!


1TBS of your favorite jelly or marmalade (preferably no added sugar)

Olive Oil

Balsamic Vinegar


Salt and Pepper to taste


Quinoa Protein Platter

1 cup quinoa

2 cups water

1 can of Garbanzo Beans

1-2 cups of chopped Spinach or Broccoli

1 tsp fresh Garlic

Handful of Cilantro

2 Basil leaves

Salt and Pepper to taste

Prepare Quinoa as noted however add the following in the pot for some extra excitement!


Sweet Potato Fries

2 Organic Sweet Potatoes peeled

1 TBS Olive Oil

Cinnamon, Salt and Pepper to taste


Cut Sweet Potato in thin slices and toss in a bowl with Olive Oil and Seasonings. Place evenly spread out on a cookie sheet. Bake at 350° for 25 minutes or until golden brown.


Moni’s Healthy Fruit Cobbler


5 Organic Gala Apples

1 bag of frozen Organic Berries

1 Lemon

1 Tbsp Maple Syrup (Grade A)



PART 2: Mix the following together in a separate bowl:

1 cup Oatmeal

1 cup of your favorite Flour

2 tsp Cinnamon


PART 3: Mix the following together in another separate bowl:

1 tsp Vanilla Extract

½ cup Maple Syrup (Grade A)

¼ cup Olive Oil

1 Egg (or Egg Substitute)


Peel and core apples and cut into quarter inch bite sizes. Place in a large baking dish and toss with (PART 1) frozen Berries, Lemon Juice and Maple Syrup.

Topping: Put wet into dry (PART 3 into PART 2) and mix with a fork. Place it evenly on top of fruit medley.

Bake at 350° for 25 minutes.
